Our Chef Pierluigi will periodically propose to our visitors a recipe from his favourites. Every recipe is a dish from our local cuisine and it will generally be very simple to prepare.
"Strascinati" typical homemade pasta with Sagrantino wine, wild asparagus and crunchy pork cheek
Ingredients for 6 people:
For the pasta: 400 gr. flour type 00, 3 eggs, 1 glass of Sagrantino wine, 1 teaspoon of extra-virgin olive oil
For the sauce: 100 gr. of wild asparagus, 100 gr. of pork cheek, extra-virgin olive oil (as needed), chopped parsley, 1 garlic clove, 7 or 8 cherry tomatoes.
Preparation
Mix and knead pasta using the above ingredients.
Roll out pasta (or use pasta machine) and cut into thin tagliatelle.
Sauce:
Heat garlic in oil until slightly golden, add the asparagus and cook for about 10 minutes; add the pork (sliced in thin strips) and cook a few minutes. Add the parsley and chopped tomatoes, and salt as needed.
Cook the pasta in salted water and toss with the freshly prepared sauce.
